Cookies are simple to make and can bring a lot of smiles to many faces without much effort. Originally, I got this recipe from Pippa Middleton’s ‘Celebrate’ book but as it was tailored to Halloween I changed it slightly, mainly becauseÂ I wasn’t keen on adding cranberries or raisins to cookies – I’m more of a chocolate only type of gal 🙂

250g unsalted butter
150g caster sugar
1 teaspoon baking powder
2 1/2 tablespoons golden syrup
3 egg yolks
500g plain flour
150g white chocolate chips
150g milk chocolate chips
Preheat your oven to gas 4 or 180 degrees and get your baking tray ready.
Mix 250g of unsalted butter (room temperature) and 150g caster sugar until you create a creamy paste. Then stir in the baking powder, golden syrup and egg yolk.Â Slowly add in the flour to form a dough that you then half. Putting one half to the side for the time being, add the white chocolate chip to the dough, roll it and form into a thick sausage shape.
If the dough seems crumbly, be sure to work it with your fingertips to eventually have a smooth shape. Do the same thing for the second half but add the milk chocolate chips and then put both halves in clingfilm and into the fridge for at least half an hour.
Once the time is up, take out the dough and slice the sausage or cut out shapes using cute cookie cutters after rolling out the dough. Put the cookies onto your baking tray when you’re happy and cook them for around 10-15 minutes until golden brown. Simple!
