Stilton Cheese and Broccoli Winter Soup Recipe

My mums significant other gave me this recipe after I tried it at their house and was instantly warmed up during a cold winter’s night. Perfect for when it’s cold, this winter soup is flavoursome and satisfying!

What You Will Need

One large broccoli

Stilton cheese to taste (I used 200g)

One cube of vegetable stock

Salt and pepper to taste

1. Cut up the broccoli into chunks and boil it for 10 minutes in the stock, ensure that it’s only covered 3/4 of the way.

2. Take it off the hob and blend it using a food blender until smooth.

3. Put it back on the hob and start adding the Stilton cheese to taste. I add a lot because I love cheese. Keep stirring and let the cheese melt thoroughly into the soup.

4. Once you’re happy with the taste and you’ve salted/peppered it to taste, add water if it’s too thick. Otherwise eat to your heart’s content!

This recipe is really easy and it’s super fast to make.

    Alina! This is literally my favorite soup ever. And this particular bowl looks so tasty.
    It’s perfect for warming you up in the winter, and so tasty. Although I’ve never actually thought to make it at home, I always buy it.
