It’s nearly New Year’s Eve and I’ve promised my close friends, who I’m spending New Year’s with, that I’ll bring along a hamper full of goodies.
Apart from the usual mince pies, chocolate moulds and rosemary olive oil, I have included chutneys. I’ve made the mango chutney (which is a little questionable in terms of it’s taste lol) and now here’s the recipe for the onion chutney, which is really simple!
What You Need:
1 Bay Leaf
75ml Olive Oil
100g Brown / Caster sugar
75g Red Wine Vinegar
75g Balsamic Vinegar
Herbs to taste
Caramelised Red Onion Chutney Recipe:
It’s very simple…
Chop the red onion to thin long slices and put into a pan to simmer for 20 minutes with the olive oil and bay leaf.
Once the onion is softened add the rest of the ingredients and cook for another half an hour.
Top Tip: work with a low heat and cover with a lid most of the duration of cooking.
